I’m Betsy Schell, certified nutrition consultant, functional medicine enthusiast and lover of clean, nourishing food and all the wonderful things that it can do for the body.
My love affair with food has had its ups and downs. Growing up, the “food” I was drawn to wasn’t really food – it was overly sweetened, processed and full of ingredients I couldn’t even pronounce. I was addicted to the taste but hated the way it made me feel. Low self-confidence, headaches, stomach issues, anxiety and fatigue were the norm for me – I just didn’t feel good in my body. When I got to college, I saw the opportunity for a new beginning and started exercising and changing my eating habits to conform with what I read in the magazines was good for me. This “healthier” way of eating turned out to not be so healthy as it was one fueled by restriction and more focused on what I could not eat than on all the wholesome and delicious foods I could eat to fuel my body. Although I was no longer eating ice cream and french fries, my mind was not in the right place and I was still consuming processed “health” foods that did not nurture my body or soul. As a result, I ended up in an even worse state than where I began.
Hitting this low enabled me to get to the point I am today – one where I celebrate real, whole food and its potential for nourishing the body on a cellular level and paving the way for a truly healthy mind, body and spirit. From my own experiences and studies, I have developed a deep understanding of the complex interplay between what we eat and think and the way our bodies react. I also work as a clinic director for a functional medicine practice in Los Angeles, and have been observing first-hand the therapeutic impacts of diet and lifestyle shifts.
